A Make-Ahead Christmas Chiffon Cake Recipe

Updated: Nov 17, 2017

It's never too early to get in the mood of holiday spirit.

Last week, while I was shopping, I saw a plethora of Christmas stuff in many shops and the magnitude of the holiday had overwhelmed me. I'm adamant to bake a deliciously memorable cake for my boyfriend's birthday. I drove my dad a little nuts after he knew that I'm going to bake a holiday cake for his birthday cake where it could easily purchase from the confectionery shop. For me, fun creativity is where you break the originality. The thought of buying cake off the shelves was way expensive yet not innovative. Since the way to win the men's heart is through his stomach. Of course, a handmade present from the kitchen is better than a gift.

The cute carrot icing sugar and the reindeer ornament reminded me of grassland and set me out to bake a matcha chiffon cake. Because of the ornament and the festive colour - green, it can double up as a Christmas cake. This chiffon cake looks impressive yet simple to make. It takes just 30 minutes of hands-on time.

Procedure

Here what you need:

  • 3 eggs

  • 4 tablespoons of cake flour

  • 5 tablespoons of granulated sugar

  • 1/4 teaspoons of cream of tartar

  • 1 tablespoons of matcha powder

  • 1 tablespoons of matcha powder (green tea powder) for cake icing

And here what you need to do:

  1. Beat the eggs and sugar on medium speed for about 10 minutes until a white perk is formed. (Tip: Add the sugar gradually for air to flow into the batter.)

  2. Add the cream of tartar to hold the mixture and retain the bubble.

  3. Sieve the cake flour and fold the flour gently in one direction until the batter mixes well. Don't stir too much else the cake texture won't be fluffy.

  4. Pre-heat the oven at 180 degree celsius.

  5. Pour the batter into the baking tin and tap the bottom of the tin twice lightly for excess air to escape.

  6. Bake the mixture for 12 minutes at 180 degree celsius.

  7. Once it is ready, hit the baking tin gently twice on the table for the excess hot air to escape and prevent the cake from sinking.

  8. To create a flavourful cake, cut the cake horizontally into half and spread your desire filling like sesame, red bean etc.

  9. Dust the surface of the cake with matcha powder to cover the uneven surface completely.

  10. Decorate your lovely cake with the ornament.

The cake looks pretty, and no one who receives the cake will know just how easy it was. Tip: You can also innovate the cake with different flavours by swooping green tea powder with other powdered ingredient, for example, coffee powder, cocoa powder, vanilla powder etc. Finally, you can also keep the reindeer ornament after devouring the cake for future gift box or the Christmas tree decoration.
